Montaire works out of a Sacramento studio, which matters more than it sounds. Ice is the one element of an event that starts changing the moment it leaves the freezer, so the distance between the carving bench and the ballroom door is a design constraint rather than a logistics footnote. Working inside the city means a piece can be held until the room is genuinely ready, and a timing change on the day does not have to be paid for by the sculpture. The range of rooms here is unusually wide for a city this size. Del Paso Country Club has been hosting events since 1896. Haggin Oaks is one of the largest golf complexes in the country. Downtown runs from Capitol Plaza Ballrooms, a block from City Hall, through to The Citizen Hotel. Every one of those rooms asks something different of a sculpture — ceiling height, sightlines, how long the piece has to hold its detail, whether it will be lit from below or washed out by the venue's own lighting. We design to the room.

The Capital Region

A Farm-to-Fork city sets a high bar for what lands on the table.

Sacramento built its food reputation on things made nearby by people who can be named, and that expectation carries straight over to everything else on the table. Ice gets looked at the same way here: guests notice whether a piece was made for the occasion or ordered from a catalogue. That works in our favour, because it is the only way we make anything. The calendar has its own shape. Gala season fills the ballrooms at Arden Hills Resort Club & Spa and Town and Country Event Center through the cooler months. Conference work at the Sacramento Convention Center runs year-round and wants branded, photographable pieces that survive a long room. Summer weddings in the valley heat are an engineering problem before they are a design one — a sculpture that looks correct at seven o'clock and has lost its edges by nine was built wrong. We size, shape and freeze for the conditions the piece will actually stand in.
